A prickly subject or a delicious dish? – Empowered Eating

Paulina Aguirre will be joining us at the Greenhouse to demonstrate some colorful and nutritious Mexican dishes made with Nopales on December 6th at 6 p.m.
When she decided to go vegetarian almost 3 years ago, she started researching the best dishes and how to prepare them. As she was researching, ” Plant based” came up on her search and she started learning more about it! With a strong influence from Mexican cooking, she naturally found herself doing simple switches in dishes like tacos or enchiladas!
“Nopales” (cactus) is highly popular in Mexico! It is used in many dishes cooked in different ways! Paulina reports that studies have shown that it can help lower blood sugar levels, regulate bowel movements and aid in weight loss.
According to Katherine Zeratsky, RD, LD at Mayo Clinic, it can be part of a healthy diet and is popular in many areas of the world, particularly Latin America, because it’s high in fiber, antioxidants and carotenoids.
Paulina will also share her efforts at her school to bring healthy eating to her students and their families!

Please meter park on street or park adjacent to greenhouse and ask for a parking pass or in parking lots at Nay Aug Park. (Greenhouse is located southwest end of park across street and down from Geisinger CMC.)
